A pastry brush will make your life simpler. Mix the nuts with the cinnamon, nutmeg, and honey in a metal or pyrex bowl. Preheat the oven to 350F, put the bowl inside, then shut off the oven. With the pastry brush, paint a layer of oil on the baking pan. (If you don't have a pastry brush spread the oil with a spoon. You'll end using more oil.) Spread a sheet of fillo on top, brush it with oil, and repeat with eleven more sheets. Take the nuts and honey from the oven and spread the mixture as evenly and gently as possible over the fillo. Turn the oven on again to 375F, then layer and brush the remaining fillo. Score it by cutting through about half the layers (not down to the bottom, or it will take forever to clean the pan.) Cut it in thirds vertically, and in fourths horizontally, to make 12 rectangles. Then cut each rectangle on a diagonal, to make triangles. Cover the pan with foil, making a tent so the foil doesn't touch the baklava. Bake for 20 minutes covered, then uncover it and cook it for another ten! minutes oe so, until it's golden brown.
