Guest guest Posted June 28, 2000 Report Share Posted June 28, 2000 * Exported from MasterCook * Spinach Manicotti Recipe By :Southern Living Cooking Light, 1983 Serving Size : 5 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 manicotti shells 2 (6-ounce) cans tomato paste 3 cups water 1/2 cup finely chopped onion 2 cloves garlic -- crushed 1/2 teaspoon dried whole basil 1/2 teaspoon dried whole oregano 1/4 teaspoon salt 1/4 teaspoon pepper 2 (10-ounce) packages frozen chopped spinach 1 (16-ounce) carton low-fat cottage cheese 1/3 cup grated Parmesan cheese 1/4 teaspoon ground nutmeg Pepper -- to taste Vegetable cooking spray Chopped fresh parsley Cook manicotti shells according to package directions, omitting salt; drain and set aside. Combine next 8 ingredients; cover and cook over low heat 1 hour. Cook spinach according to package directions, omitting salt. Drain; place on paper towels, and squeeze until barely moist. Combine spinach, cottage cheese, Parmesan cheese, nutmeg, and pepper. Stuff manicotti shells with spinach mixture, and arrange in a 13-x9-x2-inch baking dish coated with cooking spray.
