Guest guest Posted June 28, 2000 Report Share Posted June 28, 2000 * Exported from MasterCook * Garden Pasta Recipe By :Southern Living Cooking Light Serving Size : 4 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Vegetable cooking spray 1 cup chopped green onions 1/2 cup chopped fresh parsley 2 cloves garlic -- crushed 2 cups finely shredded cabbage 2 cups peeled, chopped tomato 1/2 cup sliced radishes 1/2 cup chopped carrot 1/2 cup broth 1/4 cup tomato paste 1 teaspoon dried whole basil Freshly ground pepper -- to taste 1 large tomato -- cut into wedges 4 ounces uncooked vermicelli 1 cup (4-ounce) shredded Cheddar cheese Coat a 10-inch skillet with cooking spray; place over medium heat until hot. Add onions, parsley, and garlic; saute until tender. Add cabbage, chopped tomato, radishes, carrot, broth, tomato past, basil, and pepper. Cover and simmer 10 minutes. Stir in tomato wedges; cook just until thoroughly heated. Cook vermicelli according to package directions, omitting salt; drain. Serve vegetable sauce over hot vermicelli.
