Guest guest Posted June 27, 2000 Report Share Posted June 27, 2000 * Exported from MasterCook * Grilled Fruit Kabobs Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Minute Meals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 slices fresh pineapple -- (3/4-inch thick) each cut into 6 wedges 6 medium fresh apricots -- halved and stones removed 12 large strawberries -- (firm) 3 tablespoons apricot preserves 1 tablespoon butter 1 tablespoon lemon juice Mascarpone or ice cream -- optional 1) Preheat outdoor grill. Thread pineapple, apricots and strawberries securely onto 6 metal skewers (or bamboo skewers which have been soaked in water). 2) In a small, heavy saucepan with heatproof handle, melt preserves and butter at the side of the grill. Stir in lemon juice and brush over fruit. 3) Place skewered fruit on the grill and cook, turning once, just until strawberries start to soften--1 to 2 minutes on each side. 4) Serve with mascarpone or ice cream, if desired.
