Guest guest Posted June 27, 2000 Report Share Posted June 27, 2000 * Exported from MasterCook * Broccoli with White Wine and Gruyere Cheese Recipe By :Jack Denton Scott, Bon Appetit, July 1977 Serving Size : 4 Preparation Time :0:00 Categories : July 1977 Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh broccoli 3 tablespoons dry white wine Salt and pepper 3 tablespoons melted butter 1/3 cup grated Gruyere cheese Divide thick stems of broccoli by cutting from the florets down through stems to make thin-stemmed stalks of brocoli (about 1/2 inch in diameter). Peel stems and score ends. Arrange broccoli in a glass baking dish, florets in the center, stems pointing outward. Add wine and cook in microwave, covered, 4 minutes. Turn broccoli over, and cook 4 minutes more. Remove from oven. Cover and let stand for 3 minutes. Test for tenderness. It should be crisp yet tender. Season with salt and pepper.
