Crockpot-or-Not Chili

Amount Measure Ingredient -- Preparation Method

1 cup chopped onion

4 cloves garlic -- minced

1 1/2 cups textured soy protein -- dry

1 28-ounce can tomatoes -- chopped, with liquid

1 4.5-ounce can chiles -- (mild) chopped

1 6-ounce can tomato paste

1 teaspoon oregano

2 1/2 cups water

1 15-ounce can kidney beans -- rinsed and drained

1 15-ounce can black beans -- rinsed & drained

2 Tbs chili powder

1 tsp cumin

 

Crockpot directions: Combine all ingredients in a crockpot. Cover and cook on

low for at least 8 hours.

 

Stovetop directions: Combine all ingredients in a large soup pot. Bring to a

boil, reduce heat and simmer, partially covered, for at least half an hour.

 

Yield: 10 servings Serving size: 1 cup

 

Per serving: 147 calories, 1 g total fat (0.1 g sat fat), 15 g pro, 28 g carb,

9.7 g fiber, 646 mg sodium, 0 mg cholesterol
