Guest guest Posted June 26, 2000 Report Share Posted June 26, 2000 * Exported from MasterCook * Black Bean Gazpacho Recipe By :Gabe Mirkin Serving Size : 4 Preparation Time :0:00 Categories : Fatfree Soups And Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Gazpacho soup: 2 15-ounce cans black beans, canned -- chilled, undrained 1 teaspoon Bouillon granules -- dissolved in a little hot water 1 teaspoon Ground cumin 1 teaspoon Ground coriander 1/2 teaspoon Oregano 1 pinch cayenne -- or to taste Salsa Topping: 1/4 cup Red onion -- chopped 1 ripe tomato -- chopped juice of 1 lime 2 tablespoons cilantro -- chopped (optional) Blend all soup ingredients in a blender. Pour into bowls. Mix salsa ingredients and spoon onto each bowl of gazpacho.
