Guest guest Posted June 26, 2000 Report Share Posted June 26, 2000 * Exported from MasterCook * Cajun Lentils & Zucchini Recipe By :Gabe Mirkin Serving Size : 4 Preparation Time :0:00 Categories : Beans Fatfree Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large sweet onion -- such as Vidalia, chopped 1 green pepper -- chopped 2 cups water -- MIXED WITH 2 teaspoons vegetable bouillon 1 cup lentils 1 28-ounce can plum tomatoes -- undrained 2 teaspoons cajun spice blend 4 small zucchini -- sliced Cooked whole grains -- (optional) Combine all ingredients except the zucchini in a large pot. Bring to a boil, reduce the heat and simmer about 30 minutes or until the lentils are tender. Add the zucchini and simmer 5 minutes more. Serve over the cooked whole grain of your choice if desired.
