Quick Vegetable Chilli

Amount Measure Ingredient -- Preparation Method

2 large onions

1 tablespoon olive oil

3 cloves garlic -- crushed

1 teaspoon chili powder

1 400g can tomatoes -- chopped

1 400g can red kidney beans

1 small red pepper -- roughly chopped

1 medium courgette -- sliced into chunks

cauliflower florets

2 carrots -- roughly chopped

1/2 tablespoon tomato puree

1 teaspoon dried basil -- - sweet basil

1 teaspoon oregano

1/4 to 1/2 pint stock

 

Saute the onions in the oil until soft. Add the garlic and cook for 1 minute.

Add the chilli powder and cook for a further minute. Add the rest of the

ingredients and simmer for 25-30 minutes. Serve on a bed of brown rice.
