100 grams butter

2 cloves garlic -- finely chopped

1 sprig fresh thyme

2 carrots -- peeled and grated

2 leeks -- sliced into match sticks

1 liter water

salt and freshly ground black pepper

fresh chervil leaves -- for garnish

Melt the butter in a soup pot over moderate heat. Do not let it brown. Add the

garlic and thyme, stirfry for 1 minute without browning. Add the vegetables and

Simmer 10-15 minutes, until the vegetables are cooked. Taste, and season well
