Guest guest Posted June 26, 2000 Report Share Posted June 26, 2000 * Exported from MasterCook * Potage Bonne Femme, Hanoi-style Recipe By :Ray McVinnie Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 100 grams butter 2 cloves garlic -- finely chopped 1 sprig fresh thyme 3 potatoes -- peeled, grated & squeezed dry 2 carrots -- peeled and grated 2 leeks -- sliced into match sticks 1 liter water salt and freshly ground black pepper fresh chervil leaves -- for garnish Melt the butter in a soup pot over moderate heat. Do not let it brown. Add the garlic and thyme, stirfry for 1 minute without browning. Add the vegetables and stirfry 3-4 minutes without browning. Add the water and bring to the boil. Simmer 10-15 minutes, until the vegetables are cooked. Taste, and season well with salt & pepper. And perhaps a little sugar. Garnish with chervil leaves.
