The nice thing is the recipes are from all different sources -- other cookbooks, magazines, restaurants, and individuals. * Exported from MasterCook * Cherry Tomato Boboli Recipe By :Little Meals, Rozanne Gold Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Rock! Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons vegetable oil 1/4 cup finely chopped onion 1 1/2 pounds cherry tomatoes 1 1/4 tablespoons dried tarragon 2 tablespoons cider vinegar 1 tablespoon apple jelly salt & pepper to taste 2 7-inch Boboli shells 1/2 cup shredded Asiago cheese Preheat the oven to 500ºF. Heat the oil in a nonstick skillet; add the onion and saute until soft but not brown. Add the tomatoes; cook over medium heat until they get soft and burst open, 10-15 minutes. Add the tarragon, vinegar, and jelly; season with salt & pepper to taste. Cook over high heat, pressing down on tomatoes, until the liquid has thickened, 5 minutes. Spread the mixture over tops of the Boboli crusts, and sprinkle evenly with the cheese. Bake on an ungreased cookie sheet for 8 minutes. Cut in half and serve.
