Lemon and Garlic Potato Salad

Amount Measure Ingredient -- Preparation Method

2 1/2 pounds red potatoes

1/2 cup chopped parsley

1 clove garlic -- minced

juice of 2 lemons

1 tablespoon vegetable oil

Salt and pepper -- to taste

 

Boil potatoes, and cool. Add remaining ingredients and mix well. Chill and

serve.
