Green Bean and Onion Salad

1 pound fresh green beans

1 teaspoon salt

2 tablespoons vegetable oil

1 medium onion -- thinly sliced

1 clove garlic

2 tablespoons red wine vinegar

sprinkles of salt and pepper

 

Trim green beans and add with 1 teaspoon salt to boiling water in medium

saucepan. Cook covered 5 to 6 minutes. Drain and cool under cold running

water.

 

2 tablespoons oil in saucepan over medium heat. Add onion and garlic, saute

until onion begins to sizzle. Reduce heat to low and cook covered about 4

minutes until onion is limp.

 

Add green beans to onion, drizzle with vinegar and sprinkle with salt and

pepper to taste. Toss to coat beans and transfer to serving dish. Let stand

before serving.
