Plain Noodles With Plum Vinaigrette

Amount Measure Ingredient -- Preparation Method

1/4 cup olive oil

2 tablespoons rice vinegar -- or to taste

up to 3 tablespoons

1 clove garlic -- pressed

1 umeboshi plum -- pitted and mashed

(salted pickled Asian plum)

1 teaspoon mirin -- (rice wine)

OR sugar

3 cups cooked soba -- chilled

OR udon noodles

1 tablespoon chopped fresh cilantro

1 tablespoon chopped red bell pepper

 

Serves 2 to 4.

 

This easy side dish is very piquant, a nice accompaniment to grilled foods.

 

In a large bowl, combine oil, vinegar, garlic, umeboshi and mirin. Mix

until umeboshi is completely incorporated and dressing is frothy. Taste

for seasonings; add more vinegar, if desired.

 

Toss with noodles, cilantro and bell pepper. Let stand 10 minutes before

serving.

 

Nutrition information per 1/4 serving: Calories 290, Carbohydrates 33 g,

Protein 6 g, Fat 15 g, including sat. fat 2 g, Cholesterol 40 mg, Sodium

200 mg, Calcium 17 mg, Dietary fiber 1 g. Diabetic exchanges per serving:

2 bread/ starch exch., and 3 fat exch.
