I've been formatting a bunch of recipes from the Taste for Living website.

Here's another one:

Spaghetti Bolognese (Quick and Easy Version)

cooking spray

1 medium onion -- chopped

1 tablespoon minced fresh garlic

2 teaspoons dried oregano

1 teaspoon dried basil or 1 tablespoon chopped fresh

basil

crushed red pepper flakes -- to taste

4 ounces fat-free soy sausage

4 ounces fat-free soy " meat "

1 cup low-sodium tomato puree

1 14.5 oz can low-sodium diced tomatoes

sea salt to taste

12 ounces spaghetti

 

Spray a large saucepan once with cooking spray and set over low heat. Add onions

and cook, stirring often, until onions are soft and barely translucent, about 5

minutes.

 

Add garlic, oregano, dried basil and red pepper flakes to taste and stir for 30

seconds. Stir in soy sausage and soy meat, breaking them apart with a wooden

spoon. Add tomato puree and diced tomatoes. Cook over low heat, stirring often,

for about 20 minutes, until sauce is thick. Stir in fresh basil, if using, and

season with salt.

 

Meanwhile, when the sauce is nearly ready, bring a large pot of water to a boil.

 

Add spaghetti, stir once, and cook until al dente, about 8 minutes. Drain and

serve covered with sauce.
