Guest guest Posted June 22, 2000 Report Share Posted June 22, 2000 The author recommends these with Chinese Dipping Sauce-I think I sent it Monday but will resend it. * Exported from MasterCook * Asian Potstickers Recipe By :Ultimate Vegetarian Cookbook - Paul Gayler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups all-purpose flour, plus extra to dust 1/2 cup boiling water 2 tablespoons soy sauce Chinese Dipping Sauce or a Thai sweet chili sauce to serve FOR THE FILLING 4 tablespoons vegetable oil 1 onion -- finely chopped 1 1-inch piece fresh ginger -- finely chopped 1 garlic clove -- crushed 1/4 teaspoon crushed red pepper 1/4 pound shiitake mushrooms -- chopped 1/3 cup dried black beans -- soaked overnight and cooked 3/4 cup bread crumbs 2 tablespoons chopped fresh cilantro salt and freshly ground pepper For the dough, place the flour in a large bowl. Gradually stir in the water until most of it is incorporated; add more water if the dough is too dry. Knead for 5 - 6 minutes, until smooth. Teturn the dough to the bowl, cover with plastic wrap, and let rest in a cool place for 30 minutes. For the filling, heat half the oil in a skillet and cook the onion, gingerm garlic, and pepper flakes for 1 minute over medium heat. Raise the heat, add the mushrooms and beans, and cook for 4 minutes. Add the bread crumbs and cilantro, mix well, season, then let cool. Knead the dough with a little more flour. Roll into ropes 8 inches long by 3/4 inch wide. Cut into 20 equal segments. Roll each one into 2 1/2 inch flat rounds. Place on a lightly floured baking sheet. Place 1 tablespoon of the filling in the center of each round of dough. Moisten the edge with water and pinch together with your fingers to seal and form small half-moonsHeat the remaining oil in a large nonstick pan until hot. Place the potstickers in the pan in one layer and cook them over medium heat until they are lightly browned on one side. Add 2/3 cup water and the soy sauce and cover. Raise the heat a little and cook for 10 - 12 minutes, until the liquid is absorbed and the potstickers are crisp on one side. Arrange the potstickers on a plate, crisp side up. Serve with the Chinese dipping sauce or a Thai sweet chili sauce. If you do not have the time to make the dough for this recipe, you can alwaya buy a package of wonton wrappers measuring 3 inches square and use them instead.
