Guest guest Posted June 21, 2000 Report Share Posted June 21, 2000 * Exported from MasterCook * Old-Fashioned Chocolate Pudding (Quick and Easy Version) Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Taste For Living Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups 1% chocolate soy milk 1/4 cup natural cane sugar 2 tablespoons low-fat cocoa powder 1 teaspoon pure vanilla extract 1 vanilla bean -- optional 3 tablespoons cornstarch Place soy milk, sugar, cornstarch, cocoa powder and vanilla extract in a saucepan. If using vanilla bean, split it lengthwise with a sharp knife and scrape out the seeds. Place seeds and pod in the pot with the soy milk. Cook the mixture over medium heat, stirring constantly until the mixture begins to thicken to a pudding-like consistency, about 15 minutes. Remove from heat and extract the vanilla bean pod. Pour pudding into 4 dessert dishes or 1 large bowl and chill at least 30 minutes before serving. " My lactose-intolerant family adores it! I have also doubled the recipe and put it in a baked pie shell for a terrific chocolate pie! If you do this, you will have a small amount of pudding leftover for the cook to snack on. Have used Westbrae's soy... but I bet it would be terrific with White Wave's Chocolate Silk.
