Guest guest Posted June 21, 2000 Report Share Posted June 21, 2000 * Exported from MasterCook * Southwestern Squash Casserole Recipe By :Nick Sundberg Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 small zucchini -- sliced 1 medium onion -- sliced 1 teaspoon garlic -- minced 1 1/2 tablespoons olive oil 1/2 cup sharp cheddar cheese -- grated 1/2 cup monterey jack cheese -- grated 1/2 cup white corn -- (fresh, frozen, or canned) 1/2 cup canned chopped green chiles Sauté the zucchini, onions, and garlic in the oil until just soft. Mix all ingredients together. Oil a one-quart casserole dish. Bake in a pre-heated 375-degree oven. Cook for 20-25 minutes or until the top begins to brown. Serve warm.
