I hope that it suits the Vegetarian/Vegan palette because I would hate to offend anyone. I am rather new at this, and I felt like sharing a recipe that sounds absolutely " yummy " to me. Bon appetite! Danell Southwestern Squash Casserole Variations of this dish are sometimes called " calabacitas. " Serves 4-6 4 small Zucchini, sliced 1 medium Onion, sliced 1 teaspoon garlic, minced 1 ½ Tablespoons Olive oil ½ cup Sharp cheddar, grated ½ cup Monterey jack, grated 1 ½ cups White corn (fresh, frozen, or canned) ½ cup Diced mild green chilies (canned) Sauté the zucchini, onions, and garlic in the oil until just soft. Mix all ingredients together. Oil a one-quart casserole dish. Bake in a pre-heated 375-degree oven. Cook for 20-25 minutes or until the top begins to brown.
