Guest guest Posted June 20, 2000 Report Share Posted June 20, 2000 * Exported from MasterCook * Asian Peanut Dip Recipe By :Ultimate Vegetarian Cookbook, Paul Gayler Serving Size : 10 Preparation Time :0:00 Categories : Ultimate Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons peanut oil -- or vegetable oil 2 cloves garlic -- crushed 1 small red chile -- seeded & chopped 2 tablespoons brown sugar 2 tablespoons light soy sauce 3/4 cup crunchy peanut butter 1 tablespoon lemon juice 1/2 cup coconut milk salt & freshly ground pepper Heat the oil in a large saucepan and cook the garlic and chile for 2-3 minutes over medium heat. Add the sugar and soy sauce and stir until the sugar is dissolved. Mix in the peanut butter and lemon juice, stir well, then add the coconut milk. Bring to a boil, reduce the heat, then simmer, stirring constantly, for about 10 minutes, until thickened. Season to taste and serve.
