Guest guest Posted June 20, 2000 Report Share Posted June 20, 2000 * Exported from MasterCook * Asian Mushroom Sushi Purses Recipe By :Ultimate Vegetarian Cookbook - Paul Gayler Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup short-grain rice 1/2 teaspoon granulated sugar 1/4 cup rice wine vinegar 2 tablespoons sesame oil 1 large garlic clove -- crushed 3 ounces shiitake mushrooms -- sliced 1/4 teaspoon wasabi (Japanese horseradish) 2 scallions -- shredded 1 tablespoon soy sauce 20 spring roll or wonton wrappers 1 egg -- beaten 1 tablespoon black or toasted sesame seeds vegetable oil, for deep-frying salt and freshly ground pepper Boil the rice for 20 minutes according to package instructions, until tender.emove from the heat and let stand, covered, for 10 minutes. Place the sugar and vinegar in a large pan and heat them together over low heat, stirring until the sugar has dissolved. Stir in the hot rice and let cool. Heat the sesame oil and saute the garlic and mushrooms over medium heat for 2 - 3 minutes. Place in a bowl with the wasabi, scallions, and soy sauce, then season. To assemble, dampen your hands with water and roll the rice into 1-inch balls. Make a small hole in the center of each rice ball with your thumb. Spoon a little of the mushroom and onion filling into the hole. Close up the rice around the filling. Repeat until all the mixture is used. Lay the spring roll wrappers on a clean work surface and brush them liberally with the beaten egg. Place a rice ball on each wrapper, then draw up the corners of the wrapper to form a small purse. Push the neck together to seal in the rice ball. Brush with beaten egg, then sprinkle with sesame seeds. Deep-fry a few at a time in hot oil for 2 - 3 minutes or bake for 10 - 12 minutes, until golden.
