Guest guest Posted June 20, 2000 Report Share Posted June 20, 2000 * Exported from MasterCook Mac * Garlicky Green Salad Recipe By : Cooking Light Cookbook 1989 Serving Size : 10 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup nonfat buttermilk 3 cloves garlic -- minced 2 tablespoons minced fresh parsley 2 tablespoons reduced-calorie mayonnaise 1 teaspoon cracked black pepper 1 can artichoke hearts (14 oz.) -- drained & quartered 1 can hearts of palm (14 oz.) --drained and sliced into 1/2 " pieces 3 cups shredded Boston lettuce 2 cups shredded fresh spinach 1 cup shredded curly endive 1 cup torn fresh watercress 1/2 cup chopped celery 1 tablespoon chopped fresh chives Combine buttermilk, garlic, parsley, mayonnaise, and pepper in a jar; cover tightly, and shake vigorously. Cover and chill 2 hours. Combine artichoke hearts and remaining ingredients in a large serving bowl. Shake chilled dressing mixture and pour over salad. Toss salad lightly.
