Dilled Rigatoni

1/2 package Neufchatel cheese (8-ounce) -- softened

1/4 cup hot water

2 teaspoons chopped green onion

1 teaspoon lemon juice

1/2 teaspoon dried whole dillweed

1/4 teaspoon salt

1/2 package rigatoni (16-ounce)

 

Beat Neufchatel cheese in a medium bowl until fluffy. Gradually add hot water,

beating until smooth. Stir in green onion, lemon juice, dillweed, and salt; set

aside.

 

Cook rigatoni according to package directions, omitting salt; drain well. Add

rigatoni to reserved Neufchatel mixture, tossing gently. Serve immediately.
