Black-Eyed Pea Hummus

Amount Measure Ingredient -- Preparation Method

1 cup dried black-eyed peas -- soaked overnight & cooked

3 cloves garlic -- crushed

2/3 cup tahini

juice of 2-3 lemons

2 tablespoons olive oil

1 tablespoon chopped fresh parsley -- for garnish

pinch paprika -- to serve

 

Drain the beans, reserving the cooking liquid, and set aside a tablespoon of

beans for garnishing.

 

Puree the beans in a blender or food processor with 2 tablespoons of the

reserved cooking liquid. When ground to a coarse paste, add the garlic and

tahini, and blend together thoroughly. Last, add the lemon juice and blend

until the hummus is a rich, creamy, smooth consistency.

 

Place the hummus in a shallow bowl. To serve, pour the oil over the surface,

garnish with the parsley, reserved beans, and sprinkle paprika over the top.
