Guest guest Posted June 17, 2000 Report Share Posted June 17, 2000 * Exported from MasterCook * Miniature Mango Muffins Recipe By : Cooking Light Cookbook 1991 Serving Size : 6 Preparation Time :0:00 Categories : Breads/Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup whole wheat flour 1/2 cup all-purpose flour 2 tablespoons wheat germ 2 tablespoons firmly packed brown sugar 1/2 teaspoon baking soda 1/8 teaspoon salt 1/2 cup crushed mango 1 1/2 tablespoons vegetable oil 1 egg -- beaten 2 1/4 teaspoons skim milk 1 1/2 teaspoons dark rum 1/4 teaspoon coconut extract 1/4 teaspoon almond extract Vegetable cooking spray Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine mango, oil, egg, milk, rum and flavorings; add liquid mixture to dry ingredients, stirring just until dry ingredients are moistened. Spoon batter into miniature (1 3/4-inch) muffin pans coated with cooking spray, filling three-fourths full. Bake at 350F for 10 to 12 minutes or until golden. Remove from pans, and let cook slightly on a wire rack. Yield: 18 muffins.
