Guest guest Posted June 16, 2000 Report Share Posted June 16, 2000 * Exported from MasterCook * Quick Mexican Stew Recipe By :Susan Voisin Serving Size : 8 Preparation Time :0:00 Categories : Ethnic/Mexican Favorites Low fat Main Dishes Quick And Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon olive oil -- or water 1 large onion -- chopped 2 cloves garlic -- minced 1 15-ounce can hominy -- drained 1 15-ounce can black beans -- drained 1 15-ounce can tomatoes -- peeled & diced 1/2 cup water -- or broth 2 chipotle chiles canned in adobo -- finely minced 1 cup frozen corn salt to taste 1/2 tsp. cumin 1 tsp. chili powder 1/8 tsp. ground coriander 8 medium flour tortillas Heat olive oil or other liquid in a large pot. Sauté onion until translucent and then add garlic and sauté for one more minute. Add all other ingredients. Cook at least 15 minutes. Serve with flour tortillas.
