Guest guest Posted June 16, 2000 Report Share Posted June 16, 2000 * Exported from MasterCook * Quick Artichoke Pasta Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Pasta Salads & Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces macaroni -- or other medium-sized pasta (about 1 cup) 1 6-ounce jar marinated artichoke hearts 1/4 pound mushrooms -- quartered 1 cup cherry tomatoes -- halved 1 cup pitted black olives -- (medium-size) 1 tablespoon chopped parsley 1/2 teaspoon basil salt and pepper Cook macaroni according to package directions; drain well, rinse with cold water, and drain again. Turn into a large bowl. Add artichokes and their liquid, mushrooms, cherry tomatoes, olives, parsley, and basil; toss gently. Cover and refrigerate for at least 4 hours or until the next day. Before serving, season with salt and pepper to taste. Makes 6 servings.
