Guest guest Posted June 16, 2000 Report Share Posted June 16, 2000 * Exported from MasterCook * Tempeh Fajitas Recipe By :Simply Vegetarian, Sue Spitler Serving Size : 6 Preparation Time :0:00 Categories : Simply Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces tempeh -- cut into strips 2 x 1/2 x 1/2 " 1/3 cup lime juice 1 tablespoon vegetable oil 1 1/2 cups frozen stir-fry vegetables -- (pepper blend) 1 teaspoon minced garlic 1 1/2 teaspoons ground cumin 1 1/2 teaspoons dried oregano 1 15 oz can black beans -- rinsed & drained salt & pepper to taste 12 tortillas -- (flour or corn) warm 3 tablespoons chopped fresh cilantro 1 cup salsa 3/4 cup sour cream -- (optional) Place tempeh in a shallow glass baking dish; pour lime juice over. Let stand 20 minutes; drain. Saute tempeh in oil in large skillet until browned, about 5 minutes, move tempeh to side of pan. Add pepper blend, garlic, and herbs; cook over medium heat until tender, about 5 minutes. Add beans; cook until hot, about 2 to 3 minutes. Season to taste with salt and pepper. Spoon mixture onto tortillas;sprinkle with cilantro, top with salsa and sour cream, if desired, and roll up.
