Guest guest Posted June 15, 2000 Report Share Posted June 15, 2000 * Exported from MasterCook * Mafalde with Sweet Potatoes and Kale Recipe By :Simply Vegetarian - Sue Spitler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 medium sweet potatoes -- peeled, cubed (3/4 inch) 2 medium onions -- each cut into 8 wedges and halved 2 teaspoons minced garlic 2 tablespoons olive oil 4 cups sliced kale, or Swiss chard 1/2 cup water 8 ounces mafalde -- cooked, warm 2 tablespoons shredded Parmesan cheese Simmer sweet potatoes in water to cover in medium saucepan until barely tender, 5 to 8 minutes. Drain. Saute onions and garlic in oil in large skillet 2 to 3 minutes. Add potatoes, kale, and 1/2 cup water; heat to boiling. Reduce heat and simmer, covered, until kale and potatoes are tender and water absorbed, 10 to 12 minutes.
