Guest guest Posted June 14, 2000 Report Share Posted June 14, 2000 * Exported from MasterCook Mac * Peachy Bulgur Salad Recipe By : Cooking Light Cookbook 1989 Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups boiling water 1 cup bulgur wheat 1 cup diced fresh peaches 3 tablespoons unsweetened orange juice 1 tablespoon vegetable oil 1 tablespoon lime juice 1/2 teaspoon grated lemon rind 1/2 teaspoon grated ginger root 1/4 teaspoon crushed red pepper 1/8 teaspoon ground cinnamon 1/8 teaspoon ground cumin 2 cups fresh spinach leaves -- cut in thin strips 1 medium fresh peach --peeled and cut into 8 slices Pour water over bulgur in a large bowl. Add diced peaches, tossing gently. Combine orange juice and next 7 ingredients in a small bowl; stir well. Pour orange juice mixture over bulgur mixture; toss gently. Cover and chill thoroughly. To serve, place spinach strips on a serving plate; spoon bulgur mixture over spinach, and top with peach slices.
