Guest guest Posted June 14, 2000 Report Share Posted June 14, 2000 * Exported from MasterCook * Festive Wild Rice Salad Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 113 Serving Size : 1 Preparation Time :0:00 Categories : Grains And Cereals Mirkin's 20/30 Fat & Fiber Fruits Salads, Main Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked and chilled wild rice 1/2 red bell pepper cut into 1/2-inch diamond-shaped pieces 1/2 green bell pepper cut into 1/2-inch diamond-shaped pieces 1/2 cup dried apricots -- cut into quarters 1/2 cup dried cranberries 1 bunch green onions -- sliced 1 teaspoon mild curry powder 2 tablespoons fresh lemon juice 1/2 cup fat-free mayonnaise -- or to taste Combine rice, bell peppers, apricots, and onions in a serving bowl. Stir in curry powder, lemon juice and mayonnaise. To make ahead combine all ingredients except mayonnaise, cover and refrigerate. Stir in the mayonnaise just before serving.
