Festive Wild Rice Salad

Amount Measure Ingredient -- Preparation Method

2 cups cooked and chilled wild rice

1/2 red bell pepper

cut into 1/2-inch diamond-shaped pieces

1/2 green bell pepper

cut into 1/2-inch diamond-shaped pieces

1/2 cup dried apricots -- cut into quarters

1/2 cup dried cranberries

1 bunch green onions -- sliced

1 teaspoon mild curry powder

2 tablespoons fresh lemon juice

1/2 cup fat-free mayonnaise -- or to taste

 

Combine rice, bell peppers, apricots, and onions in a serving bowl. Stir

in curry powder, lemon juice and mayonnaise. To make ahead combine all

ingredients except mayonnaise, cover and refrigerate. Stir in the

mayonnaise just before serving.

 

Yield: 6 to 8 servings, calories: 118, fat: 0g, fiber: 3g.
