Guest guest Posted June 14, 2000 Report Share Posted June 14, 2000 * Exported from MasterCook * Farmer's Paella Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 132 Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Mirkin's 20/30 Fat & Fiber Grains And Cereals Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large sweet onion -- chopped 3 stalks celery -- chopped 3 garlic cloves -- minced 1/2 cup bouillon 2 teaspoons dried oregano 1 pinch cayenne pepper -- or to taste 28 ounces canned Italian plum tomatoes -- undrained and broken up 1 red bell pepper cut into 1/2 inch chunks 1 pound asparagus cut into 1-inch pieces -- tips reserved 16 ounces canned artichoke bottoms or hearts drained and cut into bite-size pieces 4 cups cooked barley or brown rice OR other whole grains of your choice Cook the onion, celery and garlic in the bouillon in a large pot over medium heat until softened, 5 to 10 minutes. Add the remaining ingredients except the asparagus tips. Bring to a boil, reduce heat and simmer, covered, 10 to 15 minutes or until the asparagus is tender. Stir in the asparagus tips and cook 3 minutes more.
