Farmer's Paella

Amount Measure Ingredient -- Preparation Method

1 large sweet onion -- chopped

3 stalks celery -- chopped

3 garlic cloves -- minced

1/2 cup bouillon

2 teaspoons dried oregano

1 pinch cayenne pepper -- or to taste

28 ounces canned Italian plum tomatoes -- undrained

and broken up

1 red bell pepper

cut into 1/2 inch chunks

1 pound asparagus

cut into 1-inch pieces -- tips reserved

16 ounces canned artichoke bottoms or hearts

drained and cut into bite-size pieces

4 cups cooked barley or brown rice

OR other whole grains of your choice

 

Cook the onion, celery and garlic in the bouillon in a large pot over

medium heat until softened, 5 to 10 minutes. Add the remaining ingredients

except the asparagus tips. Bring to a boil, reduce heat and simmer,

covered, 10 to 15 minutes or until the asparagus is tender. Stir in the

asparagus tips and cook 3 minutes more.

 

Yield: 4 to 6 servings, calories: 164, fat: 1g, fiber: 5g.
