Greek Potatoes

6 to 8 medium red potatoes -- chopped

1 tablespoon olive oil

2 tablespoons fresh mint

2 tablespoons fresh dill

juice of 1/2 lemon

1 teaspoon salt

1/2 teaspoon pepper

 

Boil or steam the potatoes until they're tender. While they're cooking, saute

the garlic in olive oil. Remove the pan from the heat and mix in the mint,

dill, lemon, salt, and pepper. Toss this with the potatoes when they're ready.
