Garden Harvest Soup

3/4 cup chopped onion

1 teaspoon minced garlic

1 tablespoon olive oil

5 cups vegetable broth

1 1/2 cups baby carrots

1/4 pkg (22 oz size) new potato wedges

2 cups fresh, or canned, drained whole-kernal

corn

1/2 cup whole milk

1 cup halved green beans

2 medium zucchini -- sliced

1 teaspoon dried Italian seasoning

salt and pepper to taste

 

Saute onion and garlic in oil in large saucepan over medium heat 2 to 3 minutes.

Add remaining ingredients, except salt and pepper; heat to boiling. Reduce heat

and simmer, covered, until vegetables are tender, about 10 minutes. Season to

taste with salt and pepper.
