Strawberry-Buttermilk Ice Cream

Amount Measure Ingredient -- Preparation Method

2 1/4 cups fresh strawberries

1/2 cup sugar

1/4 cup orange juice, from frozen concentrate -- thawed

2 teaspoons vanilla extract

1 teaspoon strawberry extract -- optional

1 large banana

2 cups lowfat buttermilk

Orange rind strips -- optional

 

Place first 6 ingredients in a food processor; process until smooth. Combine

strawberry mixture and buttermilk in freezer can of an

ice-cream freezer; freeze according to manufacturer's instructions. Spoon ice

cream into a freezer- safe container; cover and freeze

1 hour or until firm. Garnish with orange rind strips, if desired. Serving Size:

1/2 cup

 

 

Per serving = 76 calories, 0 gm fat, 2 mg cholesterol, 46 mg sodium, 16 gm

carbohydrate, 1 gm protein, 0 gm fiber

Exchanges: 1 fruit, 1/2 other carbohydrate
