Guest guest Posted June 13, 2000 Report Share Posted June 13, 2000 * Exported from MasterCook * Yellow Squash and White Bean Chili Recipe By :Simply Vegetarian - Sue Spitler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups chopped onions 1 cup chopped yellow pepper 2 teaspoons minced garlic 2 teaspoons cumin seeds 1 to 2 tablespoons olive oil 1 medium yellow summer squash -- cubed 2 15 oz cans Great northern beans -- rinsed and drained 2 cups vegetable broth 1/2 cup dry white wine, optional 1 teaspoon dried oregano 1/2 teaspoon ground cinnamon 2 teaspoons chili powder salt and pepper to taste finely chopped tomato and cilantro, for garnish Saute onions, bell pepper, garlic, and cumin seeds in oil in large saucepan 5 minutes. Add remaining ingredients, except salt and pepper and garnishes, to saucepan; heat to boiling. Reduce heat and simmer, covered, until vegetables are tender, about 15 minutes. Simmer, uncovered, until thickened, 5 to 10 minutes. Season to taste with salt and pepper. Serve soup in bowls; sprinkle with tomato and cilantro.
