Sweet Bulgur Pilaf

2/3 cuo thinly sliced green onions and tops

1 teaspoon minced garlic

1 cup bulgur

1 to 2 tablespoons olive oil

2 1/4 cups vegetable broth

1/2 to 3/4 teaspoon ground cinnamon

2 cups cubed, peeled, seeded butternut or acorn

squash

1/4 cup currants or raisins

1/4 cup pine nuts -- toasted

1/4 cup finely chopped parsley

salt and pepper to taste

 

Saute green onions, garlic, and bulgur in oil in large saucepan over medium heat

until onions are tender, about 3 minutes. Stir in broth annd cinnamon and heat

to boiling; reduce heat and simmer, covered, 10 minutes.

 

Stir squash and currants into bulgur mixture; simmer, covered, until squash is

tender, about 15 minutes. Stir in pine nuts and parsley; season to taste with

salt and pepper.
