Bourbon Street Red Beans & Rice

Amount Measure Ingredient -- Preparation Method

1 cup chopped onion

1 cup chopped green bell pepper

1 cup chopped celery

1/2 jalapeno pepper -- (to 1) finely chopped

1 tablespoon vegetable oil

2 15 oz cans red beans -- rinsed & drained

3/4 cup vegetable broth

1 1/2 teaspoons dried thyme leaves

1 teaspoon dried oregano

1/2 teaspoon dried sage

1/4 teaspoon ground cumin -- (to 1/2 tsp)

1/4 teaspoon red pepper sauce -- (to 1/2 tsp)

4 drops liquid smoke flavoring -- (to 6 drops) (optional)

salt to taste

3 cups cooked rice -- warm

 

Saute onion, bell pepper, celery, and jalapeno in oil in a large saucepan for 8

minutes. Add beans, broth, and herbs, and cook, covered, over medium heat for

10 minutes. Simmer, uncovered, until thickened, 5-10 minutes.

 

Stir red pepper sauce and liquid smoke into beans; season to taste with salt.

Serve bean mixture over rice in shallow bowls.
