Guest guest Posted June 12, 2000 Report Share Posted June 12, 2000 * Exported from MasterCook * Citrus Romaine Salad With Strawberries Recipe By : Cooking Light, May/June 1993, page 72 Serving Size : 7 Preparation Time :0:00 Categories : 1993 Salad/Vegetable Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 navel oranges 1 tablespoon sherry vinegar 1 tablespoon honey 1 1/2 teaspoons vegetable oil 1/4 teaspoon salt 1/8 teaspoon pepper 5 cups romaine lettuce -- shredded 1 cup fresh strawberries -- halved 1/2 cup purple onions -- vertically sliced Peel and section oranges over a small bowl; squeeze membranes to extract juice. Set sections aside; reserve juice, and discard membranes. Combine 2 tablespoons reserved juice, vinegar, and next 4 ingredients; stir well with a wire whisk. Combine lettuce, strawberries, and onion in a large bowl; toss gently. Yield: 7 servings (serving size: 1 cup). To serve, pour dressing over lettuce mixture, tossing gently to coat.
