Citrus Romaine Salad With Strawberries

Amount Measure Ingredient -- Preparation Method

2 navel oranges

1 tablespoon sherry vinegar

1 tablespoon honey

1 1/2 teaspoons vegetable oil

1/4 teaspoon salt

1/8 teaspoon pepper

5 cups romaine lettuce -- shredded

1 cup fresh strawberries -- halved

1/2 cup purple onions -- vertically sliced

 

Peel and section oranges over a small bowl; squeeze membranes to extract juice.

Set sections aside; reserve juice, and discard

membranes.

 

Combine 2 tablespoons reserved juice, vinegar, and next 4 ingredients; stir well

with a wire whisk.

 

Combine lettuce, strawberries, and onion in a large bowl; toss gently. Yield: 7

servings (serving size: 1 cup).

 

To serve, pour dressing over lettuce mixture, tossing gently to coat.

 

 

 

Per serving = 52 calories, 1 gm fat, 0 mg cholesterol, 82 mg sodium, 10 gm

carbohydrate, 1 gm protein, 2 gm fiber

Exchanges: 1/2 vegetable, 1/2 fruit
