Apple Streusel Coffee Cake

Nonstick spray coating

3 tablespoons brown sugar

1 tablespoon all-purpose flour

1/2 teaspoon apple pie spice

1 tablespoon butter*

1/4 cup finely chopped toasted pecans or walnuts

1 1/2 cups all-purpose flour

3/4 cup granulated sugar

2 teaspoons baking powder

1/8 teaspoon salt

1 slightly beaten egg white

1/2 cup apple juice

3 tablespoons cooking oil

2 medium cooking apples -- peeled

cored and sliced

 

Delight family and brunch guests with this moist tender; and full-of-fruit

coffee cake then surprise them with the news that it's low in fat.

 

Spray an 8x8x2-inch baking pan with nonstick coating; set aside.

 

For streusel topping, in a small mixing bowl stir together the brown sugar,

the 1 tablespoon flour, and the apple pie spice. Using a pastry blender,

cut in butter until crumbly. Stir in pecans or walnuts. Set aside.

 

For batter, in a medium mixing bowl stir together the 1 1/2 cups flour, the

granulated sugar, baking powder, and salt. In another mixing bowl stir

together the egg white, apple juice, and cooking oil. Add juice mixture to

flour mixture, stirring just until combined.

 

Arrange the apple slices on the bottom of the prepared baking pan. Pour

batter over apples, spreading evenly. Sprinkle with streusel topping.

 

Bake in a 350F oven about 30 minutes or until a wooden toothpick inserted

near the center comes out clean. Serve coffee cake warm. Makes 9 servings.

 

Note: When making streusels, crumb crusts, crumb toppings, piecrusts,

pastries, and shorrbreads or other butter cookies, it is best to use

butter. Many margarines will not work as well due to the amount of water

they contain.
