Tempeh Fajitas

Amount Measure Ingredient -- Preparation Method

8 ounces tempeh -- cut into strips 2 x 1/2 x 1/2

1/3 cup lime juice

1 tablespoon vegetable oil

1 1/2 cups frozen stir-fry pepper blend

1 teaspoon minced garlic

1 1/2 teaspoons ground cumin

1 1/2 teaspoons dried oregano

1 15 oz can black beans -- rinsed and drained

salt and pepper to taste

12 flour or corn tortillas -- warm

3 tablespoons finely chopped cilantro

1 cup mild or medium salsa

3/4 cup fat-free sour cream

 

Place tempeh in a shallow glass baking dish; pour lime juice over. Let stand 20

minutes; drain.

 

Saute tempeh in oil in large skillet until browned, about 5 minutes; move tempeh

to side of pan. Add pepper blend, garlic, and herbs; coook over medium heat

until tender, about 5 minutes. Add beans; cook until hot, 2 to 3 minutes.

Season to taste with salt and pepper.

 

Spoon mixture onto tortillas; sprinkle with cilantro, top with salsa and sour

cream, and roll up.
