Spiced Fruity Oatmeal

Amount Measure Ingredient -- Preparation Method

1 1/2 cups apple juice

1/2 cup water

1/8 teaspoon salt

1 1/3 cups oats

1/4 cup dried cranberries

--such as craisins or raisins

1/4 cup 1% low-fat milk

1 tablespoon brown sugar

3/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

2 tablespoons chopped walnuts

 

Combine the first 3 ingredients in a medium saucepan; bring to a boil. Stir in

oats and cranberries; reduce heat, and simmer 4

minutes, stirring occasionally. Stir in milk, sugar, cinnamon, and nutmeg; cook

1 minute. Spoon into bowls; sprinkle with walnuts.

Yield: 4 servings (serving size: 3/4 cup oatmeal, and 1/2 tsp walnuts).

 

 

Per serving = 290 calories, 6 gm fat, 1 mg cholesterol, 81 mg sodium, 50 gm

carbohydrate, 10 gm protein, 7 gm fiber

Exchanges: 2 1/2 grain, 1/2 lean meat, 1/2 fruit, 1 fat

NOTES : Microwave Directions: Combine first 5 ingredients in a 2 quart glass

measure or medium bowl, and microwave on HIGH for 4

minutes or until slightly thick, stirring after 2 minutes. Stir in milk, sugar,

cinnamon, and nutmeg; let stand, covered, 1

minutes. Spoon into bowls; sprinkle with walnuts.
