1 tablespoon extra-virgin olive oil

3 large ears yellow corn -- husked

1 cup chopped green onions

2 1/4 cups water

1 1/2 cups basmati rice*

1 1/4 cups coarsely chopped toasted pecans

3 bunches watercress -- stems discarded

vinaigrette before using.)

Bring 2 1/4 cups water to boil in heavy medium saucepan. Rinse rice in strainer.

NOTES : A Dijon mustard vinaigrette brings all the flavors together. If you

can't find basmati rice, white long-grain rice is fine.
