When I saw this recipe I was reminded of a watermelon salad I had at a food

festival a few years ago.

It consisted of cubed watermelon (around 1 " ), diced cucumber, and a little

chopped onion. It was sprinkled with red pepper flakes and finely chopped

cilantro. There was no dressing, it was drizzled with lime juice. It is

delicious and very refreshing on a hot day.
