Roasted Eggplant and Tomatoes with Ziti

Amount Measure Ingredient -- Preparation Method

olive oil spray

1 medium eggplant -- unpeeled, cut into 1/2 " slices

3 medium onions -- cut into 1/2 " wedges

1/2 teaspoon dried thyme leaves

1/2 teaspoon dried marjoram leaves

1/2 teaspoon dried savory leaves

salt & pepper to taste

1 14.5 oz can diced tomatoes with roasted garlic

8 ounces ziti pasta -- cooked, warm

 

Line jelly roll pan with aluminum foil and spray with cooking spray. Cut

eggplant slices into fourths; arrange on jelly roll pan with onions. Spray

vegetables with cooking spray; sprinkle with herbs, salt, and pepper.

 

Roast vegetables at 450ºF for 20 minutes. Spoon tomatoes over vegetables and

roast until eggplant is tender, 5 to 10 minutes longer. Serve over ziti.
