Guest guest Posted June 7, 2000 Report Share Posted June 7, 2000 * Exported from MasterCook * Tofu with Thai Peanut Sauce Recipe By : Some Like It Hot - Robin Robertson Serving Size : 1 Preparation Time :0:00 Categories : Vegan Thai Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon safflower oil 1 pound extra-firm tofu -- cut into 1/2 inch strips 1 tablespoon minced fresh garlic 1 small hot chili -- minced 1/2 cup chopped scallions 1 tablespoon chopped fresh ginger 1 tablespoon low-sodium tamari 1 tablespoon dry sherry. 1 teaspoon sugar 1 can sliced bamboo shoots -- (8 ounce) drained 1/4 cup unsalted peanuts -- chopped ----Spicy Peanut Sauce---- 4 tablespoons creamy peanut butter 2 tablespoons low-sodium tamari 2 teaspoons sugar 2 teaspoons white vinegar 1 1/2 teaspoons chili paste Freshly cooked Jasmine rice For the tofu: Heat the oil in a large skillet over medium-high heat. Add the tofu, garlic, chili, scallions and ginger, and cook for 5 minutes or until tofu is lightly browned. Add the tamari, sherry, sugar, bamboo shoots, and peanuts, and mix well. Add the Peanut Sauce and stir until well combined. cook for 2 minutes or until all of the ingredients are hot. Serve at once over freshly cooked jasmine rice. For the Peanut Sauce: In a small bowl or food processor, blend the peanut butter, 2 tablespoons water, the tamari, sugar, vinegar, and chili paste. Taste and adjust seasonings.
