Guest guest Posted June 7, 2000 Report Share Posted June 7, 2000 * Exported from MasterCook * Hot and Sour Thai Soup Recipe By : Some Like It Hot - Robin Robertson Serving Size : 6 Preparation Time :0:00 Categories : Vegan Thai Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups vegetable stock 1 teaspoon salt 3 stalks lemongrass -- cut into 1 inch lengths 1 teaspoon lime zest -- slivered 2 green serrano chilies -- slivered 1 pound extra-firm tofu -- cut into 1/4 inch dice 1 tablespoon low-sodium tamari Juice of 2 limes 2 tablespoons chopped fresh cilantro 3 scallions -- chopped In a large saucepan, combine the stock, salt, lemongrass, lime zest, and chilies. Bring to a boil, cover, reduce the heat, and simmer for 20 minutes. Strain through a sieve, return the liquid to the saucepan, bring to a boil, and cook for 2 to 3 minutes to bleand flavors. Reduce the heat to a simmer and add the tofu, tamari, and lime juice. Stir gently and simmer 1 minute to heat through.
