Potato Ratatouille

Amount Measure Ingredient -- Preparation Method

2 large yellow onions -- chopped

2 cloves garlic -- minced

1/4 cup water

3 green peppers -- chopped

4 zucchini -- sliced

2 large potatoes -- peeled and chopped

4 cups tomatoes -- peeled and chopped (or 32-oz. can)

1 teaspoon chopped basil -- (or 1/2 tsp. dried)

1 teaspoon chopped fresh oregano -- (or 1/2 tsp. dried)

2 tablespoons chopped fresh parsley -- (or 1 tbs. dried)

freshly ground black pepper -- to taste

 

Place onions and garlic in a large pot with water. Cook and stir for about 3

minutes. Add remaining ingredients, except for pepper. Cover and cook over

medium heat for 30 minutes, stirring occasionally. Season with pepper before

serving.
