Guest guest Posted June 6, 2000 Report Share Posted June 6, 2000 * Exported from MasterCook * Lemon Pesto Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Appetizers & Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups fresh basil leaves -- (packed) 3/4 cup freshly grated Parmesan cheese -- (about 2 1/2 ounces) 1/2 cup olive oil 1/2 cup pine nuts 3 tablespoons fresh lemon juice 2 large garlic cloves 1 teaspoon grated lemon peel Puree all ingredients in processor. Season to taste with salt and pepper. (Can be made 2 days ahead. Transfer pesto to bowl. Press plastic wrap onto surface of pesto. Cover and chill.) Makes about 1 1/2 cups. Converted by MC_Buster.
