Recipes where the main ingredient are beans. Some examples to give a better idea ...... Spinach and Chickpea Soup Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 11 ounces dry chickpeas 1 bay leaf 1 small garlic 1 large onion - peeled and quartered 1 lb 2 oz spinach leaves - washed salt and either cayenne or freshly ground black pepper 2 tablespoons olive oil 1 thick slice bread - crumbled 1 small garlic 2 teaspoons chopped fresh parsley Soak the chick peas (garbanzos) overnight in cold water. Drain and place in a pan with enough cold water to cover. Add the bay leaf, the unpeeled garlic, and the onion. Bring to a boil, cover and simmer for about 1 hour until the chick peas are almost done. Cook the spinach in a separate pan, using just the water trapped in the leaves after washing, with a little added salt. Drain and reserve. Heat the oil and gently fry the other clove of chopped garlic with the bread and parsley. Remove and blend to a smooth paste with a little of the chick pea cooking water. Remove and discard the head of garlic, bay leaf, and onion segments cooked with the chickpeas. Stir in the spinach and gradually mix in the garlic and bread paste. Cover and simmer for 10 minutes. Season with salt, pepper and serve. -------- Aubergine With Lentils - Phad Makhua Sai Thua Khiew Ingredients: 1/4 lb lentils 1/2 teaspoon salt 8 oz aubergine (eggplant) 4 cloves garlic 1 fresh chili 2 tablespoons vegetable oil 1 tablespoon light soysauce 4 tablespoons water 10 cilantro leaves Preparation: Cover the lentils with boiling water and leave for 2 hours. Drain, Cover with fresh water, add salt, bring to the boil and cook, covered for 1/2 hour. Drain. Cut the aubergines lengthwise into 4 pieces and then cut these quarters into 5-cm (2-inch) pieces. Pound the garlic and chili together. Then fry them in the vegetable oil until golden. Add the lentils, soy sauce, aubergine pieces and water to the garlic and chili in the pan. Continue frying for 2-3 minutes until the aubergine is cooked.
